EASIEST CHILI RECIPE – EVERRRRR

THE BACKSTORY 

One of my all time favorite Chili is from Zippy’s restaurant in Hawaii. Zippy’s is a chain that only exists in Hawaii, though I do believe, they might be finally opening a location in Vegas. It’s a staple. A place where the locals eat. It’s home cooked fast food with the option to dine in. 
 

 It is the first stop I make when visiting home.  When I moved away from home, I would order frozen Zippy’s Chili from their online shop but then found a copy cat recipe on the web and made a video of it on my Youtube channel.   

 However, there’s a lot of stuff that goes into that chili and some days I just don’t have the time or energy. Over the years, I’ve created my own version of this chili which tastes pretty damn similar but requires much less time, effort and ingredients. So here is, my lazy girl’s chili that’s so friggen delicious, you’ll never make any other recipe again.
 
I love it over steamed rice with a scoop of macaroni salad.  One of my kids prefers it over fritos while my other two love it with my kick-ass cornbread.

EASIEST CHILI EVER

Ingredients

  • 1 bag Stubbs Chili mix
  • 1 lb ground beef
  • 1 lb ground italian sausage
  • 1 can diced tomatoes
  • 1 can red kidney beans drained
  • 1 can cream of mushroom soup

Instructions

  • Brown the ground beef and italian sausage.
  • Add in the dry spice packed from the Stubbs Chili mix
  • When beef and sausage is brown, add remaining ingredients and “Finishing” packet from Stubbs bag.
  • Let simmer for 30 minutes or if in pressure cooker on high for 15 minutes or low for 30 minutes.
  • I love it with rice and mac salad but my kids love to eat it with on fritos or cornbread.

EASY INDOOR SHRIMP BOIL

Shrimp Boil

THE EASIEST SHRIMP BOIL YOU WILL EVER MAKE

 

I love making easy yet delicious meals but what I love even more is when these meals are a social thing.  What I mean by this is when everyone comes to the table to catch up and enjoy each other’s company around a great meal.  

When my hubby graduated from his residency, I  had a shrimp and lobster boil for his classmates and their families.  Since then, we have fallen in love with all kinds of boils – Crawfish, lobster, shrimp, my family loves them all.  Several years ago during winter I was craving a good shrimp boil but the weather wasn’t suited to cook outdoors.  So I took the same concept, simplified it and brought it indoors.  

We still have a summer outdoor boil, which is roughly during Crawfish season, but with this recipe we can substitute shrimp or lobster all year round.  Try this with your family.  It’s a great way to get everyone together!

Shrimp Boil

INDOOR SHRIMP BOIL

Course: Main Course
Servings: 5

Ingredients

  • 2 lbs Small potatoes - fingerlings or steamables
  • 12 Corn frozen or fresh
  • 2-3 lbs Sausage
  • 2-3 lbs Shrimp 21/25 de-veined
  • 1 stick of butter
  • 1 - 2 T garlic minced
  • 3-5 T Old Bay Seasoning

Instructions

  • Steam potatoes, set aside
  • Fill two large pots with water & bring to a boil
  • In one pot add the corn & sausage & boil for 15 minutes, then set aside
  • In the second pot of boiling water add the shrimp and boil for 3-5 minutes, then set aside
  • Clean out one pot then return to stove on medium high heat
  • Add butter and 1 - 2 T of minced garlic
  • Add shrimp to butter & garlic mix
  • Add Old bay to taste approximately 3-5 T
  • Add steamed potatoes, corn & sausage to the shrimp & butter mixture & toss quickly
  • Serve on brown butcher paper or in a big serving tray
  • Everyone grabs what they want to eat.

Note: Serve with mustard to dip your sausage & potatoes

HAMBURGER MACARONI

BACKSTORY

My elementary school had a cafeteria where lunches were made from scratch by a lady named Mrs. Fo (pronounced F-oh) and her staff. There were dishes she made that I loved and then there were others that I was forced to eat because the teachers watched us.
 
If we didn’t eat enough of our food and tried to escape, they would turn us back around and insist we not waste food. There was a table by the exit were all the kids who didn’t eat enough would be seated because they got caught. On the days I loved the food, I would look back and feel bad for the kids sitting there.
 
I remember vividly choking down food by drinking my milk with it to mask the taste. Sounds so ridiculous now but that trick worked. Another thing I remember was I hated milk but the only way you could get juice was with a Doctors note and I most definitely didn’t have one of those.
 
One of the dishes I didn’t love in elementary was called Hamburger Macaroni. I don’t exactly know why I disliked it to be honest. Ironically, I love the heck out of it now. I remember learning a trick from my friend Eric B, he would stuff the food in his milk carton when the teacher wasn’t looking. I took that trick and ran with it. Every time we had Hamburger Macaroni half of mine went into my milk carton because they didn’t check how much milk you drank. Ahhh to be young and rascal again.
 

FAST FORWARD

 
Anyhow, as I got older and started cooking for my family, I started to make lists of things my kids might like to eat. I pulled that Hamburger Macaroni dish from my memories and tested it out on them. Kids love Mac n Cheese. Why wouldn’t they love this? Which i’m guessing is what Mrs. Fo thought as well.
 
Surprisingly all of my kids loved it growing up over a mound of rice because rice is a staple in our home. As young adults, they tolerate it and roll their eyes when they see what’s on the menu. I can only get away with making this once a month or else my hubby and I are the only ones eating it.
 
It’s one of my favorite Lazy Girl dishes because it’s easy and nostalgic. Do you have foods from your childhood that you hated then but love now? This is mine & here’s the recipe below:

Hamburger Macaroni

Ingredients

  • 1 tray of ground beef
  • 1 box of Mac n Cheese any brand
  • 1 small can of tomato sauce
  • 1 T garlic salt
  • 1 T onion powder
  • S & P to taste

Instructions

  • Fill a large pot with water and bring to a boil
  • Prepare the macaroni according to directions on the box
  • Reserve the cheese packet on the side
  • When macaroni is done, strain and set aside
  • In the same pot you boiled the macaroni in, brown the ground beef
  • Season with garlic salt, onion powder and salt & pepper
  • When ground beef is browned add the cooked macaroni, sauce packet and tomato sauce
  • Simmer 5 minutes
  • Serve over rice, rolls or a salad
