Christmas Crack Recipe

The story behind this Christmas Crack

Every year, I put together treat baskets to send out to family, friends & referring offices.  One year I posted a video on SnapChat about how I made my version of this & while I love it, it’s time consuming, a little pricey & extremely messy.  People love when I make it but to be completely honest, I actually hated making it.  Yet every stinkin’ year, like clockwork, I would get several requests for it.  This treat is so delicious I have named it Christmas Crack because you will get hooked!

A couple of years ago,  that’s 2 years according to my hubbys definition (SnapChat reference), my girlfriend Tiff sent me her version & let me tell you, I have been hooked ever since.  Part of the reason is that it’s so yummy and the other reason is that I didn’t have to make it! LOL

This year,  my friend Tiff shared her recipe with me. I was amazed at how few ingredients it required, how fast it took & how delicious it is.  I Snapchatted me making it & after getting Tiff’s permission, I’m able to share it with you all.

BUT FIRST I MUST WARN YOU…

You MUST make the first batch for yourself!  You MUST!! It is the prerequisite for this recipe.  You will understand & thank me later.  If you fail to follow that rule, you will find yourself picking from every single batch you make thereafter, eat more then you should & short-change others. So trust me when I say, make the first batch for yourself to enjoy as you make more for others.

And now for the best Christmas treat EVER

CHRISTMAS CRACK

Equipment

  • Microwave
  • Cookie sheet
  • Parchment or Wax paper
  • Pyrex Dish
  • Huge bowl

Ingredients

  • 1 bag Chesters Puffed Corn
  • 1 packet White Almond Bark
  • 1 bag M & Ms
  • 1 bag Pretzels
  • 1 box Rice Chex
  • 1 bottle Sprinkles

Instructions

  • In a pyrex dish heat half of the Almond bark till melted, 30 second intervals
  • Meanwhile, dump puffed corn, pretzels, m&ms & chex into a bowl
  • When the almond bark is melted pour it over the puffed corn mixture & mix well
  • Pour mixture out onto a parchment lined baking pan & top with Sprinkles
  • Let cool!
  • Bag or box up to give away!

For reference here are the ingredients in case you’re not sure what Chester’s Puff Corn or Almond Bark look like.  I bought everything from Walmart.

Chicken and Somethings – a spin on the traditional Chicken & Dumplings

But first let me tell you a funny story.  I love Chicken & Dumplings.  Like love love love it like a mama loves her chil’ren kinda love.  It’s warm, filling & yummy for your tummy kinda food.  

I’ve been making this dish in two forms for forever.  Sometimes I feel like getting fancy so I make it from scratch while other times I get a little lazy and make an easier but just as delicious version of it.  Every time I make it, my hubster always says without fail, this isn’t Chicken & Dumplings. He “claims” it’s more like a pot pie but take a look at my picture above, does that look like a pot pie to you?  

This ain’t no pot pie, no it is not! 

Over the years & every darn time I make this, we always go back & forth about exactly what this dish is.  So last night after Snapchatting, I finally picked what i’m gonna call this dish. This is Chicken & Somethings because it’s something like a pot pie but something like a dumpling too!

Because truly, what exactly is a dumpling?  In my experience & based on my Asian heritage, dumplings are dough filled with meat all folded together to form a cute little scrumptious package.  China has won tons, Gyoza’s in Japan & then there’s Mandoo in Korea. I’ve also grown to love the fried Mexican Dumplings known as Empanadas.  Lord help me my mouth waters as I type this post.  

My Southern Belle girlfriend, Laura, makes a mean Chicken & Dumplings. Her dumplings are like dough pieces submerged in the chicken mixture which isn’t quite like a dumpling at all but rather like a soggy yet delicious piece of dough.  My version is little clouds of “Something’s” that sit nicely on the top of the dish. They come out a nice golden brown, much like myself after I’ve been sitting on a beach somewhere in Mexico.  LOL  

Anyhow…..

Below is my easy peasy version because last night, I was hungry,  tired & had no desire to slave away in the kitchen.  I hope you enjoy it! To be completely honest… 

Prior to watching the Disney Pixar Movie, I had no idea what Ratatouille was.  The only thing I knew was it was a French dish & I love French food.  After watching the movie, I researched several recipes online on how to make the dish “exactly” the way Remy, the rat, made it.  I tried different versions. They were all time consuming and lacked a little something.  In my head, I had this idea of what I thought it should taste like.  Once I have that vision, I can pretty much duplicate any dish.

Over the past few years, I have perfected my fancy schmancy recipe for Ratatouille but in all honesty, because it’s time-consuming, I don’t make it as often as I would like. That led to Lazy girl *points to self* coming up with an easier yet still tasty version of a dish that I have grown to love.  This dish is all veggies and great for those who do meatless Mondays or meatless period.  It’s also great when the weather gets cooler and you’re in need of something hearty and warm.

For the love of Crockpots

If you don’t already own a crockpot, you should.  They have them for less than $20 at Walmart!  If you have a bigger family, get a 6-quart size.

Next time I make the fancier version of this, I’ll be sure to share it but for now here’s the easiest Ratatouille dish you will ever make.  It’s quick, crockpot & tasty!
