THANKSGIVING CROQUETTES

Tired of eating Thanksgiving Left Overs?

I’m not sure about you, but by the 2nd day after Thanksgiving my family is so done eating left overs yet we still have things that need to be eaten because I hate wasting food.  Usually we’ll have Left Over Ham & Potato Soup or these delicious croquettes.

These are fairly simple to make & since everything is already cooked, you just have to fry these till they’re golden brown. 

I serve these with whatever left over sides we have. This year we had my moms Sweet Potato Souffle but you could also add a salad to it & it would go great.  The beauty of this recipe is it can be made with almost any left overs you might have provided the base is mashed potatoes.

THANKSGIVING CROQUETTES

Easy delicious dish to help use the last of your Thanksgiving Left Overs
Prep Time10 mins
Cook Time7 mins
Course: Main Course
Cuisine: American

Equipment

  • Frying Pan
  • Oil

Ingredients

  • Left Over Mashed Potatoes
  • Left Over Turkey chopped
  • Left Over Stuffing
  • 1 cup All Purpose Flour
  • Eggs lightly scrambled
  • 1 bag Panko

Instructions

  • In a bowl add first 3, mix & form into patties
  • In 3 separate dishes, add flour to one, egg to another & the panko in the last
  • Dip each patty into the flour, then the eggs & lastly the panko. Making sure it's breaded well.
  • Add to pan & fry for 4 minutes on one side then 3 on the next
  • Wehn done, set on a paper towel to drain off excess oil

Notes

Serve with Dipping sauces: Mixture of left over cranberries & mayo OR gravy.

Meal Planning

Meal Planning stress you out?

Me too!  Or at least it use to. I don’t know about you but there is nothing more stressful than worrying about what’s for dinner. Then wondering if you have all the right ingredients for your last minute ideas. Thanks to meal planning, those moments are few and far between.

Over the past several years, I’ve developed a system for myself that takes the stress out of wondering what i’m feeding my family every night. I meal plan every Sunday after i’ve made breakfast.

This allows for several things to happen:

  • I have a captured audience who can add their suggestions to the weeks meals
  • It eliminates complaints because I’ve given them a chance to participate
  • It’s another nice little slice of family time
  • It alleviates me having to come up with ALL the meals for the week

I also have a little notebook of tried and true favorite meals for each family member.  These meals get plugged into the menu when I run out of ideas. I’ve had this notebook for years and it’s been interesting to see how their tastebuds have changed or not *cough RJ*

The system

Once menu suggestions are listed I go onto my calendar and look at two things – upcoming events and the weather. Those two factors will determine what meals gets made on what days. Busy days require easy meals, special weather days require certain meals to help the body maintain its equilibrium. The latter deserves a whole post all by itself, but that’s for another post. 

After our meal plan is laid out, I tackle my grocery list.  Checking my pantry, fridge and freezer for the things I need. Things I don’t have gets added to the running grocery list I have on my fridge. One of my pet peeves is buying something I already have on hand. 

Lastly I go online and grocery shop which is a time, money and sanity saver.  The bulk of my shopping is done on Walmart.com but I also get items from Kroger, Sams, Target and Sprouts.  I cannot emphasize enough what a money saver it has been to shop online. 

  • It allows me to stick to my grocery list
  • It prevents me from wandering around the store adding unnecessary items to my cart
  • Curb side pick up is a massive time saver allowing me to have more time to do other things

Almost all the stores I mentioned above has some kind of grocery pick up.  If you haven’t tried it, I highly suggest it.  If picking up is an issue you can also do instacart for grocery delivery.  My local Walmart has started a delivery program – $98/year for unlimited grocery deliveries. I’m seriously considering this service  as another step to save time. Check your local stores to see if this is available in your area.

SHUMAI RECIPE – a spin on the traditional

In Hawaii, it’s known as Pork Hash

 

BACKSTORY – One of the things I miss about home, Hawaii, is the food.  A favorite is Shumai or what we like to call, Pork Hash. In the states,  people get these at Chinese Dim Sum restaurants but in Hawaii you can find Shumai everywhere.  At little grab and go eateries, or Okazuya’s,  & Manapua wagons (a great story for another post)

I’ve learned the next best thing to going home to Hawaii is bringing a little bit of Hawaii to me.  Making food I grew up on does exactly this.  Recently, I had a craving for Pork Hash but these little yummies are time consuming to make.

First you have to prep the filling, stuff won ton wrappers then steam them.  I didn’t have the time nor the energy to do all that so I figured I’d put my spin on it. Thus the unfilled Pork Hash was born.

I share a lot of good, useful stuff that you didn’t know you needed in your life.  LOL Instastories are only viewable for 24 hours but I’m inserting the video snippet in case you missed it or need a refresher. 

Shumai
Print Recipe

SHUMAI RECIPE - unstuffed

also known in Hawaii as Pork Hash
Prep Time10 mins
Cook Time30 mins
Course: Main Course
Cuisine: Chinese
Keyword: Pork Hash, Shumai
Servings: 6 people

Ingredients

  • 4 T olive oil extra virgin
  • 2 trays ground pork
  • 1/4 cup sweet onions diced
  • 2 T garlic diced
  • 2 T ginger diced
  • 2 T sesame oil
  • 4 T soy sauce
  • 2 T sugar I use date sugar but use whatever you have
  • baby bok choy about 10 or so of them, chopped
  • 1 can water chestnuts diced
  • Salt & Pepper to taste

Instructions

  • Add olive oil to wok/pan on Med high heat
  • Saute onion, garlic and ginger till onion is translucent
  • Add ground pork and brown
  • Add sesame oil, soy sauce & sugar to pork & mix well
  • Add baby bok choy & water chestnuts & cook 2 minutes
  • Simmer everything for another 5 minutes

Notes

Serve over rice or tofu or as a filling in a lettuce leaf
