EASY SPANISH RICE RECIPE

The EASIEST Spanish Rice you will ever make

Backstory

Before my hubby proposed to me, he took me home to meet his family.  My late father-in-law was Cuban and came over from Cuba as a young boy. My mother-in-law is Puerto Rican & also came over as a young child.  She was the youngest of 16 children in her family. Can you imagine birthing 16 kids?  *shivers*

I’m pretty sure they were apprehensive about their son being with someone from Hawaii. I remember my hubby trying to explain to them my nationality.  Hawaii is a melting pot with a very small population being 100% pure Hawaiian. Most people are a mix of things: Hawaiian, Japanese, Chinese, Korean, Filipino, Samoan etc.  I happen to be a mix of things.

Anyhow as most initial introductions go, it was awkward and uncomfortable, mostly for me.  I remember my ex sister-in-law calling the house and my mother-in-law whispering into the phone trying to give her a description of what I looked like.  *chuckles* As most of you know from following me on Instagram or SnapChat, my hubby is fair skinned, dark hair and dark eyes.  Totally opposite of him, my brother-in-law is caucasian in complexion, dirty blonde hair and blue eyes.  FYI neither of them are adopted. lol 

To keep everything in context, my ex sister-in-law is white as snow with reddish blonde hair.  So you can imagine how, brown skinned me, stood out like a sore thumb at the house.  Anyway, right from jump they decided to have a dinner with my brother-in-law, his then wife and my hubbys God-parents. 

I remember my late father in law asking me if I wanted a steak because they were making Spanish food.  He said it wouldn’t be a problem because he was making one for my ex sister-in-law since she didn’t eat Spanish food.  I declined because I was brought up eating a lot of different kinds of food, Spanish food being one of my faves. I shared with him that one of my best friends from College, Cybilee, was Puerto Rican & her family made some awesome Puerto Rican dishes.  

But does she really eat Spanish food?

 

So as they laid out the spread of Spanish food, I helped myself to all of it.  I remember this vividly.  All of their eyes almost popped out of their heads as I started to eat pasteles and gandule rice (Spanish rice w/ pigeon peas)  Perhaps they thought I was lying or just being polite when I said I ate that kind of food but after clearing my plate, they knew I was a keeper.  

In fact, when I was pregnant, my inlaws would cook me Spanish food, freeze it and over night it to me all the way from Jersey.  Every time we would go and visit my in-laws, I would watch them cook. They both cooked equally amazing.  My mother-in-law cooks more from feel and taste. My late father-in-law cooked from a cookbook, which he gave to me before passing. 

Over the years, I have taken what I learned from them and put my easy lazy girl spin on it. Because as you well know, I love to eat but I hate slaving in the kitchen.  The following recipe is my take on my mother-in-laws Spanish rice with gandule beans (pigeon peas). It’s super easy, inexpensive to make and delicious.  Recently, my mother-in-law traveled from Jersey to attend RJ’s graduation, I made this rice for our bbq and she LOVED it.  Let me also add that she’s extremely picky about how food tastes so since she ate a lot of it, I know it’s a winner…like me!  lol

SPANISH RICE RECIPE

Prep Time10 mins
Cook Time40 mins
Course: Side Dish
Servings: 12 people

Ingredients

  • 7 cups long grain rice
  • 1 container of Goya Sofrito found in the frozen section
  • 1 packet of Goya Sazon - Achiote & Culantro flavor
  • 7.5 cups of chicken broth
  • 1 can Pigeon Peas drained
  • 4 T butter
  • pinch of pepper
  • A large pot

Instructions

  • In a large pot on medium melt the butter for about a minute
  • Add the rice and brown slightly about 2 minutes
  • Add the entire container of Goya Sofrito and cook till sofrito is completely thawed in the rice
  • Add 1 packet of Goya Sazon, pigeon peas and chicken broth.
  • Stir well
  • Lower heat to simmer and cook approximately 40 min till rice liquid is completely gone and rice is fluffy

Notes

Serve with Roast pork and plantains
Can also be made with pork that is sauteed before adding everything else.

Cheerios Bar

FUNNY STORY:

I keep my grocery list on my fridge.  Everyone knows that’s where they put stuff they need from the store.

I have one rule, if it’s not on the list, it doesn’t get bought.

Last week, RJ wrote Cheerios.  So I bought Cheerios….the plain old school basic Cheerios. When I set it on the counter, he shrieked and said “That’s not what I wanted!”  I showed him the list. The list clearly said….Cheerios.  

Apparently he wanted Honey Nut Cheerios, because above all else, I should be able to read minds.  Now mind you, I didn’t just buy the small box of Cheerios. I bought the FAMILY SIZE which means a hell of a lot of cheerios needs to be eaten. 1 entire pound to be exact.  

Since he wasn’t going to voluntarily eat these doggone plain Cheerios, I had to come up with something because one way or another these damn cheerios needs to be eaten. I racked my brain for a few minutes and came up with something similar to Rice Krispy treats.  

 I put some of his favorite things in it – marshmallows, peanut butter & nutella.  This took me all of 10 minutes from start to finish and dare I say they taste pretty damn delish!  When my daughter got home she had 2 bars without any coaxing.

This means 3 things: 

  1. It’s delish 
  2. If she’s eating it, then everyone will eat it
  3. I win, the Cheerios will be gone in no time.

Here’s my Cheerios bar recipe. It’s super yummy. I also provide a few options to make it healthier.

CHEERIOS BARS

Course: Dessert

Servings: 10

Ingredients

  • 1/2 LB or 1/2 box of Cheerios
  • 1 stick of butter save the wrapper
  • 1 bag of mini marshmallows
  • 1/2 cup of peanut butter
  • 1/2 cup of nutella
  • 1 13x9 pyrex dish

Instructions

  • Use the butter wrapper and coat the pyrex dish, set aside
  • In a large pot, melt entire stick of butter
  • When butter is melted add the mini marshmallows
  • When marshmallows are completely melted add the peanut butter & nutella.
  • Mix thoroughly
  • Then add the Cheerios and mix well
  • Transfer Cheerios mix to buttered pyrex dish & set aside to cool

Notes

Optional:
Drizzle melted chocolate over top of the Cheerios
For a healthier option, use almond butter or sunflower butter instead of peanut butter
And add nuts and dried cranberries to the cheerios mix.

EASIEST CHILI RECIPE – EVERRRRR

THE BACKSTORY 

One of my all time favorite Chili is from Zippy’s restaurant in Hawaii. Zippy’s is a chain that only exists in Hawaii, though I do believe, they might be finally opening a location in Vegas. It’s a staple. A place where the locals eat. It’s home cooked fast food with the option to dine in. 
 

 It is the first stop I make when visiting home.  When I moved away from home, I would order frozen Zippy’s Chili from their online shop but then found a copy cat recipe on the web and made a video of it on my Youtube channel.   

 However, there’s a lot of stuff that goes into that chili and some days I just don’t have the time or energy. Over the years, I’ve created my own version of this chili which tastes pretty damn similar but requires much less time, effort and ingredients. So here is, my lazy girl’s chili that’s so friggen delicious, you’ll never make any other recipe again.
 
I love it over steamed rice with a scoop of macaroni salad.  One of my kids prefers it over fritos while my other two love it with my kick-ass cornbread.

EASIEST CHILI EVER

Ingredients

  • 1 bag Stubbs Chili mix
  • 1 lb ground beef
  • 1 lb ground italian sausage
  • 1 can diced tomatoes
  • 1 can red kidney beans drained
  • 1 can cream of mushroom soup

Instructions

  • Brown the ground beef and italian sausage.
  • Add in the dry spice packed from the Stubbs Chili mix
  • When beef and sausage is brown, add remaining ingredients and “Finishing” packet from Stubbs bag.
  • Let simmer for 30 minutes or if in pressure cooker on high for 15 minutes or low for 30 minutes.
  • I love it with rice and mac salad but my kids love to eat it with on fritos or cornbread.
