52 WEEK MONEY CHALLENGE 

For the past few years, I’ve been doing the 52 Week Money Challenge but in reverse.  Which means instead of banking $1 on week 1, I do $52 in week 1.  The main reason for doing this is because at the end of the year I have tons of birthdays along with the holidays, it’s virtually impossible to save during this time. I decided it would be much easier to start with the bulk of the savings in the beginning of the year.  Since making this decision, it has really made the challenge easier!  The great thing about this challenge is you end up with extra money you’ve been stashing away & end the year feeling proud of that accomplishment.

One of the easiest things I make is this killer APPLE DUMP PIE that I show on my SnapChat turned into Vlog on my YouTube Channel! Not only is it easy but it’s also very versatile and can be used with whatever canned fruit you desire!

Fina’s Famous Spanish Frittata

Fina was my Spanish neighbor who lived diagonally across the street from our home when we were stationed in San Antonio.   She was an older lady & all of her kids were out of the house & had their own families all spread across the country. Her husband worked for Lockheed Martin & always traveled for business which left her alone 4 out of 7 days of the week. When we moved onto her street, within a matter of hours, she knocked on the door with a round pie dish in hand. At the time I was very pregnant with RJ, tired from the move & grumpy as hell.  I vividly remember answering the door to the most pleasant person who’s warmth radiated in just a few words “Welcome to the neighborhood”. Those words made the grump go away…wait I lie, maybe it was the round plate of food that made the grumpy monster subside. 

She didn’t want to stay but wanted to welcome us & leave us with a plate of her “famous Spanish Frittata”.  That night, I fell in love with Fina’s Famous Spanish Frittata. A day later I sent her a written Thank you note & told her that I ate the whole pie by myself. TBT (Truth be told) her tortilla had onions in it…lots of onions & large pieces of it. Both the hubs & our oldest kid despise onions which meant more for me!!!!! 

Frittata’s are like a crustless Quiche. Fina’s famous Spanish Frittata was simply eggs, onions & potato’s with a pinch of salt, pepper & garlic. Fina would bring over a Frittata at least once a month & before we PCS’d from San Antonio, she taught me how to make it & told me in Spain, it’s called Tortilla Espanol. 

I have since adapted Fina’s recipe to add my own spin on it. I’ve included both Fina’s recipe & my own below.  A few years ago, I was saddened to find that Fina had passed. Her warmth & kindness to a young mother who was far away from home will never be forgotten!

SnapChat Vlog Oct 2015 Flashback

In my SnapChat Vlog Oct 2015 Flashback I baked my favorite Spanish Fritatta, tried a Indoor S’mores cups recipe with my kids & showed a couple of books I loved reading.  The S’mores recipe will be posted below but the Spanish Frittata will come in a separate post because I want to share the little story behind it. 

JONESING FOR INDOOR S’MORES

  My kids are dessert fiends! My daughter mentioned she saw a recipe on Pinterest for indoor S’mores & wanted me to replicate it. This was the first night I made these & while they were good, I wasn’t happy with the way the crust came out. It was way to crumbly & hard to keep together when eating.  The next time I made it, I added my own little spin on the crust & was much happier with the flavor as well how it stayed together.  The recipe below is the way I’ve made it ever since.

BLAST FROM THE PAST BOOKS

The books I spoke about while perusing Barnes & Noble was Pillars of the Earth by Ken Follet & The Outlander series by Diana Gabaldon. Pillars of the Earth was an Oprah book club book eons ago & because I love Oprah, I often purchase what she recommends. The Diana Gabaldon series was recommended to me by my favorite Barnes & Noble Cashier!
